200 g Enoki mushrooms

150 g Lotus root, sliced into circles

240 g Sugar snap peas

200 g Corn kernels

20 g Red dates, deseeded and soak to rehydrate

20 g Ginger, minced

20 g Garlic, minced

1 tsp Sesame oil

1 tsp Light soy sauce

2 tbsp Water

2 tbsp Cooking oil

Heat up oil in frying pan, sauté ginger and garlic until fragrant.

Add in lotus root and stir fry for 30 seconds. Next, add in sugar snap peas, corn kernels, enoki mushroom and red dates. Stir well.

Add in Knorr All-In-One Seasoning, sesame oil, soy sauce and water. Stir well and dish up.

Garnish with toasted walnuts before serve.
