For meatballs:

  • 450 g Minced Chicken
  • 2 cloves Garlic, minced
  • 1 Egg Yolk
  • 2 tbsp Soy Sauce
  • 3 tsp Corn Flour
  • Pinch of pepper

For sauce:

  • 3 tbsp Juice from the canned Lychee
  • 4 tbsp White vinegar
  • 4 tbsp Tomato ketchup
  • 3 tsp Brown sugar
  • 2 tsp Grated ginger
  • Pepper to taste
  • 1 Medium red Onion, cut into wedges
  • 1 Red Pepper, cut into wedges
  • 1 Yellow Pepper, cut into wedges
  • 1 Medium Japanese cucumber, cut into wedges
  • 1 Mandarin orange, peel into small segments
  • 16 nos Lychees from a can
  • Cooking oil for frying



For the sauce, mix all ingredients until well combined. Set aside.



For meatballs, mix all ingredients until well combined and shape into 1 inch balls. Heat up oil in a frying pan and pan fry meatballs until browned. Set aside.



Heat up 2 tbsp oil in the frying pan, sauté onion for 30 seconds. Then, add in the rest of the vegetables and fruits. Stir fry for a minute.



Pour in sauce and meatballs. Simmer for 2-3 minutes or until meatballs are cooked. Serve hot.
