For the Salad
no Japanese cucumber
cup Coriander leaves
cup Mint Leaves
g Mixed salad greens
g Cashew nuts, unsalted, toasted
no Mango, cut into thin slices
- Fish and nuts are the good sources of protein. Protein is essential for growth and development.
- Mango is high in folate and vitamin C. Folate plats a role in a formation of red blood cells, whereby vitamin C contributes to the absorption of iron from food.
In a bowl, mix first five ingredients together. Spread the mixture over the barramundi fillet and let to marinate for 1 hour.
Bake fish in preheated oven at 170°C for 10 minutes.
For the salad combine all ingredients together and place fish over salad.
Drizzle Hellmann’s Smoky Caesar dressing over salad. Serve lime at the side of salad to be squeezed just before eating.
