70 g Kimchi, cut into smaller pieces

40 g Yellow capsicum, thinly sliced

1 tbsp Spring onions, chopped

45 g Plain flour

45 g Potato starch

¼ tsp Baking soda

2 tbsp Kimchi juice from kimchi

90 ml Cold sparkling water

2 tbsp Cooking oil

Spring onion and red chilli for garnishing

In a bowl, mix all dry ingredients together. Pour in sparkling water and kimchi juice. Mix well.

Heat up oil in frying pan, pour in flour mixture and spread it out evenly. Pan fry for 2 minutes

Add in kimchi, capsicum and spring onion. Cook for a further 1 minute.

Flip the pancake over and cook for a further 2-3 minutes.
