  • 1 kg Lamb shoulder
  • 30 g Coriander, finely chopped
  • 3-4 pcs Kaffir lime leaves, thinly sliced
  • 2 Bird’s eye chilies, finely chopped
  • 2 pips Garlic, finely chopped
  • 1 tbsp Fish sauce
  • 2 tbsp Lime juice
  • 2 tbsp Brown sugar
  • 1 tsp Dark soy sauce

For couscous salad:

  • 1 cup Couscous, cooked as per instruction on packaging
  • ½ Red capsicum, diced
  • ½ Yellow capsicum, diced
  • 2- 3 Shallot, thinly sliced
  • 2 tbsp Olive oil
  • Black pepper to taste

Nutritional tips

Bell peppers that come in various colours provide different type of antioxidants. Antioxidants is needed for body health such as reduce inflammation.



Marinate lamb shoulder for 2 hours or overnight with all the ingredients.


Bake in preheated oven at 160˚C for 20 minutes or until well done. Serve with couscous salad, roasted vegetables or mashed potatoes.


For couscous salad, mix all ingredients together.
