1 kg Lamb shoulder

30 g Coriander, finely chopped

3-4 pcs Kaffir lime leaves, thinly sliced

2 Bird’s eye chilies, finely chopped

2 pips Garlic, finely chopped

1 tbsp Fish sauce

2 tbsp Lime juice

2 tbsp Brown sugar

1 tsp Dark soy sauce
For couscous salad:
-
1 cup Couscous, cooked as per instruction on packaging

½ Red capsicum, diced
-
½ Yellow capsicum, diced

2- 3 Shallot, thinly sliced
-
2 tbsp Olive oil
-
Black pepper to taste

Marinate lamb shoulder for 2 hours or overnight with all the ingredients.

Bake in preheated oven at 160˚C for 20 minutes or until well done. Serve with couscous salad, roasted vegetables or mashed potatoes.

For couscous salad, mix all ingredients together.
