1 kg Boneless chicken thighs, cut into cubes

Bamboo skewers
For the Satay Marinate:
-
3 stalks Lemongrass
-
2 cloves Garlic
-
8 Shallots
-
2 tsp Turmeric powder
-
2 tsp Coriander powder
-
1 tsp Chilli powder
-
2 tbsp Palm sugar (Gula Melaka)

Salt to taste
For the Gado-gado:
-
2 Potatoes, cut into quarters and boiled
-
2 Hard boiled eggs, cut into quarters
-
1 cup Bean sprout, blanched
-
1 cup Long Beans, cut into 2 inch length and blanched
-
2 Firm tofu, pan fried and cut into cubes
-
1 Cucumber, cut into 3-4 inch length
-
1 Carrot, cut into 3-4 inch length
For the Peanut Mayo Dipping Sauce:
-
200 g Peanut, roasted
-
4 cloves Garlic
-
50 g Palm sugar (Gula Melaka)
-
5 Bird’s eye chilli
-
1 tsp Toasted shrimp paste (belacan)
-
1 tbsp Tamarind pulp
-
1 nos Lime juice
-
1 tbsp Light Soy Sauce
-
1 cup Water or more to desired consistency

Salt to taste
Langkah-langkah
In a food processor, finely blend all the ingredients for marinating.
Pour the marinade over the chicken cubes and mix well to combine. Marinate for 4-6 hours. (overnight is best). Once done thread 3-4 chicken cubes onto the bamboo skewers.
To make the dipping sauce, place Lady’s Choice Real Mayonnaise, roasted peanuts together with all the other ingredients into a food processor. Blend till well combined. Remove and transfer to a pot. Gently stir and bring to a boil. Taste for seasoning. Dish up and set aside.
Preheat the oven to 200˚C. Place a lightly oiled wire baking rack over a foiled lined baking sheet and set aside.
Bake the chicken skewers for 12-15 minutes or until cooked.
To plate up, arrange the gado-gado vegetables and satay on a platter and serve with the peanut mayo dipping sauce.
