Double Boiled Whole Winter Melon Soup
- 1 Knorr Kiub Pati Ayam
- 1 (4-4.5kg) Medium winter Melon
- 250 g Village chicken breast, cubed
- 6 Dried oysters
- 6 Dried scallops
- 10 g Dried Cuttlefish strip
- 8 Red dates, halved
- ¼ tsp White Pepper
- 1 tbsp Soy sauce
- 1 tbsp Goji Berries
- 6 Dried Shitake Mushrooms
- Water
- Salt and pepper to taste

Soak dried oyster, scallop and dried mushroom in a bowl for 30 minutes. Drain and reserve the liquid.

Marinade chicken with pepper and soy sauce for 30 minutes.

Cut off the top of the melon to make a lid. Remove seeds and stringy pulp. Place the melon in a shallow bowl.

Place chicken into the melon, followed by oyster, scallop, red dates and mushroom. Pour in reserved soaking liquid and top up with water until ¾ full. Put the lid on.

Pour water (about 1inch) into a large pot and bring to a boil. Place in the melon and steam for 30 minutes. Add water into the pot if needed.

Remove lid and add in cuttlefish strips, goji berries and Knorr Chicken Cube. Put the lid on and continue to steam for a further 30 minutes or until the melon is tender. Add water into the pot if needed.

Gently remove the melon from pot and serve hot.
